This month seemed to fly by! Here are some things I liked this month! Enjoy!
Food!
I’m trying to get in the habit of making salads for lunch, and being excited about eating salads for lunch, after two years of working from home and never knowing what to eat for lunch. A couple weeks this month I made a big batch of salad dressing, and prepped lots of greens (kale! radicchio! romaine! arugula!) and toppings to throw in throughout the week. Nothing revolutionary, but it’s working out pretty well! Some of my fave toppings: sliced pepperoncini, crispy chickpeas (I don’t make them myself because they never get crispy enough), snap peas, marinated artichoke hearts from the olive bar, croutons, feta, and I even started making myself hard boiled eggs to add to my salads (I only like them chopped or crumbled in a salad)! If you have a favorite salad dressing recipe (or a store bought one that is amazing), let me know!
Here is something delicious and easy to make for dinner to use up that head of cauliflower rolling around in the produce drawer: Cauliflower gratin from Alison Roman, but I also cook 1 cup of farro (in the instant pot) and mix that in, using a larger pan and adding a bit extra liquid (I used oat milk in addition to the cream) to bake it. This reheats pretty good for lunches too!
Last but not least, a simple and fast Kale Pasta dish that I really loved for dinner recently.

The Five Wounds by Kirsten Valdez Quade is by far the best book I read in April. I just loved each character so much, flaws and all. They were each so REAL to me and it is one of those books that when I was done, I was a bit sad and wished I could have kept reading to stay in that world a bit longer, and see how things turned out.
Projects!
I got all my pockets done, over 500 of them, for the puffy quilt and got them sewn into rows. I have moved onto sewing the rows together and stuffing them as I go. It’s so satisfying seeing the puffs come to life!! I am planning to use this on our bed instead of a duvet+cover because I HATE dealing with the duvet cover and being able to throw this whole thing in the wash will be so much easier!
Miscellaneous!
I know I have mentioned Wordle and Quordle, but Matthew and I also started playing Framed (guess a movie in 6 frames) and Heardle (guess a song by hearing the first few seconds). On April Fools’ Day Heardle totally rickrolled me, by redirecting to YouTube and I loved it. Definitely the best prank I saw on the internet that day.
Went to see Hamilton and it was amazing!!!

Springtime baby! April 29th was our one year Adoptiversary of this little monster! We love her so much! She makes me laugh and smile every day and I am so thankful we get to be her people. 💜
